AeroFarms, which supplies microgreens to the U.S. retail market, recently announced the launch of its newest product, micro bok choy.

The addition to AeroFarms’ FlavorSpectrum delivers a versatile, mild and sweet flavor for everyday meals. It can complement sandwiches, stir-fries, smoothies and tacos, and its texture and bite-size appeal create a lettuce substitute for salad greens.

“At AeroFarms, our obsession with flavor fuels our innovation, but nutrition is our true passion,” said AeroFarms CEO Molly Montgomery. “Microgreens contain four to 40 times more nutrients than their mature vegetable counterparts.”
